Durante dos jornadas hemos recorrido esta Unidad Alimentaria, visitando a grandes empresas, y algunas más modestas, y en todas ellas hemos encontrado nuevos proyectos, iniciativas diferenciadoras, pero también reclamaciones para que este Mercado no pierda el liderazgo que ha llegado a tener.

«En Mercamadrid hay que estar»

CMR Infinita ha consolidado en el inicio del presente año 2015, el crecimiento con el que cerraba el ejercicio anterior. Buenos datos que confirman que la estrategia de negocio por la que apostó la entidad hace más de una década era acertada: ampliar el abanico de remitencia tanto a nivel geográfico como numérico, especialización en productos, marcas con valor añadido y gestión comercial segmentada por canales de distribución. Todo este trabajo desarrollado desde unas modernas instalaciones. «Creemos en el potencial de Mercamadrid como Unidad Alimentaria. Aquí hay que estar y por ello, no hemos dudado a la hora de realizar inversiones en las instalaciones, que nos permiten ofrecer el mejor servicio a nuestros remitentes y clientes», nos explica Jesús López, gerente de CMR Infinita.
Entre ellos, la distribución organizada sigue teniendo un gran peso para esta entidad que ha sabido adaptarse a sus nuevas necesidades. «Les ofrecemos rapidez en la entrega, servicio 24 horas, apoyo ante posibles rupturas de stock, y sobre todo, especialización en productos como el plátano, la banana, cítricos, etc…», nos describe Jesús López, quien al mismo tiempo apunta como un valor añadido en su empresa, la colaboración y compromiso con los remitentes, gracias a lo cual han logrado potenciar marcas como CosaRica, Infinita y Aridane entre otras.
Sobre Mercamadrid, destaca la mejora en la comunicación y colaboración con la nueva Dirección del Mercado, factor muy importante y positivo y que ha facilitado avances en materias de movilidad, seguridad y limpieza, que realzan la imagen y calidad de Mercamadrid. Creemos no obstante que es necesario seguir trabajando en aspectos organizativos y de proyección del Mercado a nivel de operativa comercial, horarios de actividad y de expansión geográfica del potencial del mismo. «Hay que realizar una profunda reflexión, donde participen todos, operadores y Dirección, pues al final se trata de eso, mejorar el servicio a este segmento de operadores», añade López.
Toda una amplia oferta concentrada

Nada más entrar en el mercado, encontramos las naves de Ahorramás y Makro, lo que indica que la gran Distribución sigue presente, no toda se ha dirigido directamente a origen. Y es que ante su búsqueda por una extensa gama de productos de calidad con un suministro estable, ésta encuentra respuesta aún en esta Unidad Alimentaria, concretamente en empresas como Frutas Olivar. Una entidad que a lo largo de su dilatada trayectoria ha ido adaptándose a las nuevas tendencias, apostando por un importante crecimiento en su número de referencias y llevando a cabo la importación de productos de calidad de ultramar. En la actualidad se ha convertido en un mayorista de calado a nivel nacional, cuyo valor diferencial se basa en que son también productores, que trabajan bajo la firma Valgren, con determinados productos como la cereza, fresa, castaña e higo seco. Así garantizan un suministro, una calidad y una mayor competitividad. Pero su presencia traspasa fronteras y cada día trabaja por incrementar su cuota de exportación, como nos comenta en su nueva y moderna nave de frío Andrés Álvarez hijo, el gerente de la firma: “Llevamos tres años trabajando con el Norte de Europa y los países bálticos y nuestro objetivo es alcanzar un mayor número de destinos interesantes, para lo que estamos obteniendo las certificaciones correspondientes”.
Para desarrollar este y otros proyectos, desde Frutas Olivar consideran que necesitan el impulso de este mercado central, que está perdiendo el posicionamiento que debería tener a nivel nacional e internacional. Su falta de inversión en las naves de frutas y hortalizas, sus carencias en seguridad, limpieza y organización, ponen sobre la mesa problemas evidentes, entre los que sobresale el eterno debate del horario, que a juicio de Álvarez, “nos resta competitividad y clientes frente a Mercabarna”. Son las primeras impresiones negativas que recogemos de este mercado, y no las últimas.
La especialización, el mejor arma

Continuamos nuestro recorrido dirigiéndonos hacia las cuarteladas de otra gran empresa, Grupo Guerrero. La diversificación de productos es una estrategia fundamental en la realidad actual del Mercado, pero ante el auge de esta tendencia, cualquier entidad hoy día provee de todo tipo de referencias. La mirada está puesta en la especialización del mayorista en uno o varios productos, que toma ahora una mayor relevancia a la hora de alcanzar el éxito, como comenta Antonio Guerrero, gerente de Guerrero Madrid: “Si no eres un puntal importante en un producto o varios, pasas desapercibido, por ello has de llevar a cabo alianzas con proveedores fuertes o contar con producciones propias para garantizar una calidad y un suministro”. Así, dentro de su variada cartera de productos, la firma, con una trayectoria histórica en la distribución nacional, es fuerte en tomates en todas sus variedades, que producen en fincas propias en Almería, así como en fresones, frutas de temporada, y como no, auténticos especialistas en nueces de todas las procedencias, dátiles de Israel y un gran surtido de productos secos en general.
Guerrero refleja bien una de las estrategias por las que se inclinan los mayoristas de Mercamadrid, como vía para continuar trabajando ante la complicada situación actual que presenta la Unidad Alimentaria, que registra cada vez una menor afluencia de clientes, según indican los mayoristas: “El mercado se está quedando obsoleto y Mercamadrid no reacciona ante nuestras demandas, cuyo objetivo no es otro que tener un mercado más cómodo para nosotros y los clientes, y más moderno. Y si queremos coger oxígeno, deberíamos adoptar un horario diurno”, insisten reiteradamente desde Grupo Guerrero, ya que consideran que el actual frena las oportunidades de las empresas del mercado para seguir creciendo.
Líderes por una estrategia diferenciada
CULTIVAR

No podíamos hacer un Especial de Mercamadrid sin visitar las naves de una empresa puntera en la importación de productos tropicales y exóticos, Cultivar. A pesar de la crisis, este tipo de frutas y verduras han consolidado su cuota de mercado, en constante crecimiento, hasta el punto de que algunas han pasado a convertirse en verdaderos commodities. Y es que Cultivar ha logrado acercar este tipo de productos a los consumidores, ofreciendo una buena calidad a un precio ajustado. “Reaccionar ante las tendencias del mercado, siendo dinámicos e innovadores constituye nuestra forma de trabajar”, alega su delegado en el Mercado, Bartolomé García. Siguiendo estos principios, continúan apostando por introducir otras referencias a su gama, tales como la línea ecológica, con la que se están iniciando desde Barcelona y el plátano, para el que han invertido en nuevas cámaras de maduración ampliando la nave en la que nos encontramos. Todo un ejemplo de que las empresas de esta Unidad Alimentaria tienen potencial y van creciendo, pese a las adversidades. Una de ellas, el horario actual: “Tenemos como referencia de éxito el horario diurno de nuestro buque insignia, la firma en Mercabarna”, señala.
Así, un impulso por parte de Mercamadrid mejorando la gestión y su funcionamiento diario contribuiría en el desarrollo de estas entidades. Porque los Mercas son necesarios en España y este en el que nos encontramos puede llegar a ser, de nuevo, su máximo exponente. “Para ello es preciso mucho diálogo”, resumen desde Cultivar.
La exportación, un aliado en estos tiempos

Iniciamos la jornada con una visita a los puestos de la empresa Euromerca, donde nos reunimos con Luis López, responsable de Administración, quien nos atiende en el lugar de Pedro González, el gerente, que se encuentra de viaje en Italia. Una situación habitual últimamente, teniendo en cuenta que la firma ha iniciado desde hace pocos meses acuerdos comerciales con este país, al igual que con Rumanía, con los que están obteniendo buenos resultados. “La exportación a estos nuevos mercados está funcionando bien y seguimos apostando por incrementar nuestro nivel de ventas en el exterior ya que aquí el consumo se encuentra estancado”, comenta Luis. En este sentido, aduce a que la realidad económica puede estar cambiando, pero sólo a nivel macroeconómico, “en la calle y en el día a día sigue habiendo gente en paro”.
Una situación a la que los mayoristas deben enfrentarse actualizando sus estrategias de negocios como lo ha hecho Euromerca, pero que necesita de un impulso por parte de la gestión de Mercamadrid: “El mercado está anticuado y sus elevados costes de alquiler no nos ayudan a ser competitivos”. Sin embargo, hay aspectos que no cambiaría, como es el horario: “no es momento para aventurarse en una novedad que puede perjudicar a nuestros propios clientes”, señalan desde la firma al respecto. Alrededor de este y otros debates, seguimos midiendo el pulso del Merca.
Acercándose a los clientes

Según nuestra clase política, son varios los indicadores que marcan un cambio de tendencia en la economía española, sin embargo, a pie de calle, mejor dicho, a pie de mercado, ese cambio no se ve tan claro. Al menos así nos lo transmiten en esta visita al que, por ahora, sigue siendo el principal mercado mayorista de nuestro país. «Todavía es pronto para ver los efectos de la recuperación, pues el consumo no acaba de despegar», nos describe José Ángel Ferrer, responsable de ventas en Frutinter Mercamadrid, una entidad que ha sabido actualizar su modelo de negocio en Mercamadrid en base a dos líneas. Por un lado, apostando por la diversificación de productos, y por otro, ofreciendo un trato personalizado a cada cliente.
Y es que si hace unos años Frutinter destacaba por su oferta citrícola, ahora quien se acerque a sus puestos podrá encontrar, además, manzanas, peras, melones y sandías, incluso productos de contra-estación. «Hemos establecido relaciones comerciales con distintas empresas en origen, tanto a nivel nacional como internacional», apunta Ferrer.
Para Frutinter también ha sido clave la apuesta que ha realizado para ofrecer a cada cliente el trato y servicio que necesita: a la distribución, ventajas logísticas derivadas de esa diversificación de productos; y a los clientes minoristas, todo el apoyo que necesitan para intentar activar sus ventas. «Si seguimos ofreciendo productos de calidad, seguro lograremos recuperar una buena dinámica en el negocio», apunta.
Pero para ello también será determinante resolver cuestiones enquistadas en este mercado central desde hace muchos años, y que le está llevando a perder el liderazgo de años atrás: el horario, la movilidad, la seguridad, la promoción, el canon de entrada… son algunos de ellos.
Una atención personalizada y amplia gama de productos

Visitando a las diferentes empresas del mercado, nos preguntamos cuál es ese valor añadido que ofrecen los mayoristas a sus clientes que les hace mantenerse al pie del cañón. En la empresa Víctor Lázaro lo tienen claro: “La atención personalizada y una amplia gama de productos frescos es nuestra principal baza”. Especialmente en el momento actual donde se está poniendo en boga la apuesta por una vida saludable, con una alimentación equilibrada y sin alérgenos, algo que ofrecen principalmente las frutas y hortalizas.
En este sentido, por mucho que cambien las tendencias y la distribución se vaya a origen, “al final somos un sector de servicios y suministramos a nuestros clientes lo que necesitan». En este sentido, en Victor Lázaro prestan una atención especial a la presentación de los productos, ya que lo que antes se degustaba con el paladar, ahora se hace con la vista. Y así lo podemos constatar paseando por su cuartelada, con gran variedad de productos expuestos en atractivos formatos.

En la cuartelada de Frutas Marpa confirmamos uno de los temores que se venían anunciando por las condiciones laborales actuales que se han marcado los mayoristas en Mercamadrid, principalmente debido al horario: la falta de relevo generacional. El gerente de esta pequeña empresa, Rafael Martínez, presente en el Merca desde su inauguración en el año 82, nos anuncia su decisión de cerrar el negocio próximamente por la futura jubilación de sus dos socios: “Yo solo al frente no puedo seguir adelante, la jornada para un mayorista es interminable y creo que es momento de retirarme”, declara. Este representa uno de los hándicaps del horario actual, la falta de interés de los jóvenes por este oficio, que resulta agotador y que altera el estilo de vida habitual. Al menos, esta entidad no cierra por un descenso en sus ventas, aquello de lo que se aquejan muchos de los mayoristas: “Las grandes empresas del mercado que vendían a la gran distribución son los que han padecido más la crisis al dirigirse esta a origen, nosotros, al vender a detallistas, hemos mantenido el volumen”, aclara.
Nos despedimos de Rafael sentado en su oficina de la cuartelada, con unas vistas que dejará de contemplar en poco tiempo. Pero no será nuestro caso, que contiuamos el recorrido por Mercamadrid dirigiéndonos a la nave D.
Una gestión más eficiente

Es la una del mediodía, han pasado más de 12 horas desde que Mercamadrid abriera sus puertas. A pesar de esta larga jornada laboral, aún en la Nave D encontramos luz en las oficinas de la empresa Frutas Javier Martín, cuyo gerente, Javier Martín, aprovecha estos momentos de «tranquilidad» para realizar tareas administrativas. «Tan importante es realizar una buena venta como cobrarla», nos comenta, haciéndonos un hueco en su mesa entre tantos papeles. Igualmente persistentes son las quejas que Javier Martín nos traslada sobre las actuales infraestructuras de Mercamadrid: los viales están muy deteriorados y necesitan una urgente reparación, conviven con aves que revolotean en las naves, con los problemas que ello conlleva… En definitiva, una situación que a medida que va pasando el tiempo se hace más complicada ya que el mercado se va quedando obsoleto en lugar de ser moderno y dinámico. Ante todo esto, Javier Martín es muy claro y reclama diálogo con la Administración, más aún cuando la concesión con el Ayuntamiento finaliza en 2032. Pueden parecer muchos años, pero significa un freno a la hora de invertir en este mercado central.
Otra forma de trabajar
HNOS. MONTES
Raul Fernández, gerente de Hnos. Montes
En Mercamadrid hay muchas formas de trabajar, y en Hnos. Montes encontramos una distinta. Está comprobado que ofreciendo calidad se activan las ventas. El gerente de Hnos. Montes, Raul Fernández, así nos lo confirma. Durante el ejercicio pasado, esta entidad alcanzó una comercialización en tomates superior a las 1.500 Tn, un 50% más que el año anterior. «Y todo gracias a un cambio de estrategia: solo ofrecemos la máxima calidad, y en el caso del tomate o de la fruta de hueso, especialización. Pero detrás de este caso de éxito, se esconde una filosofía de trabajo muy adaptada a los nuevos ritmos, donde tanto los proveedores como los clientes y consumidores son los verdaderos protagonistas. A los primeros les une una misma inquietud, ofrecer del campo sólo lo mejor. Y para acercarse a los segundos, han desarrollado acciones que por el momento vemos únicas en este mercado: la comunicación on line. Hnos. Montes está decidida a darle al cliente, a la tienda tradicional, la importancia que se merece, y lo hace a través de las redes sociales. «En nuestro blog, a través de Facebook o Twitter, publicamos entrevistas con fruteros, donde nos cuentan la historia de su tienda, el producto que ofrecen, con el fin de acercarlos al consumidor final», nos explica Raúl.
Sobre Mercamadrid, el gerente de Hnos. Montes es especialmente crítico con la gestión que se está llevando a cabo en esta Unidad Alimentaria, por la apatía que reina en este mercado a la hora de tomar decisiones, como por ejemplo el cambio de horario. Raúl no reclama venta diurna, pero sí que se cumpla el oficial, y se controle: «Ganaríamos en movilidad, seguridad, agilidad en las ventas, en definitiva, poder atender mejor las demandas de los clientes».
En la búsqueda de nuevos horizontes

La complicada situación actual obliga a apostar por nuevas líneas de negocio y en esa dirección trabaja el Grupo Lorenzo Carrasco. En este sentido, hace pocos meses que decidieron cubrir un eslabón más de la cadena, la producción, para lo que crearon la S.C.A. Una apuesta que se ha llevado a cabo confiando en la calidad de las tierras y el agua de esta zona, donde se desarrollan unos cultivos hortícolas muy apreciados por la distribución europea, “por los que este año hemos recibido una respuesta muy positiva por nuestros clientes, quienes nos han felicitado, queriendo ampliar volumen de trabajo de cara a la campaña que viene”, señala Carrasco.
De forma paralela, la entidad también está afianzando las líneas nacionales iniciadas el año pasado, así como limando aspectos muy importantes de logística en la exportación, tanto aéreos como marítimos. “Las previsiones son muy buenas pero hay que seguir en la búsqueda de nuevos horizontes”, enfatiza.
En su objetivo de mejora constante, confían en que pronto se produzca un cambio de horario en Mercamadrid a diurno porque creen que supondría una revolución en varios aspectos y, lógicamente, uno de ellos sería el avance empresarial. “La inquietud profesional que hay en Mercabarna no es la misma que hay en Madrid. ¿Si es sólo por el horario nocturno?
